Rack Of Lamb with Figs, Honey and Thyme
Main Ingredient:
Fig Balsamic Glaze
Ingredients:
1 lb. Rack of lamb
1 tsp. Fresh thyme
2 dry figs chopped
¼ cup honey
¼ cup red vinegar
1 tsp. Salt
1/5 tsp. Pepper
2 oz. Creamy gorgonzola
2 tbsp. heavy cream
2 tbsp. Acetum fig balsamic glaze
Cooking Instructions:
Add thyme, honey, red vinegar, salt and pepper to food processor and blend well, add figs. Heat grill, season rack of lamb with salt and pepper, sear lamb on the grill about 5 minutes both sides, then dip in figs/thyme mixture. Finish cooking lamb in broiler. Put gorgonzola and heavy cream in a sauté pan, let melt, then cover the center of serving dish. Finally, place the lamb on top and drizzle with Acetum Fig balsamic glaze.
