The current menu at this world-renown restaurant was created by it’s award-winning Chef Luciano Pellegrini combining an appetizing array of contemporary and traditional Italian dishes and decadent desserts. In a rare sneak peak behind the scenes of the Venetian, Las Vegas Chef Pellegrini was recently featured on food and drink portal FoodEnquirer.com showing the secrets of his leek and mushroom soup.
With record breaking cold temperatures this year we could all use something warm to get us through these freezing winter days and nights. What could be better than serving up a bowl of soup just the way they do it at this legendary restaurant? In his video direct from the kitchen of the Valentino Luciano Pellegrini show exactly how it is done. This is a nice twist on the typical leek and potato soup that is so common this time of year. Not only do the mushrooms add a little more class and flavor but pack lots of protein as well. In addition to button mushrooms Chef Luciano Pellegrini uses a blend of shiitake and oyster mushrooms to add a new dimension to this soup. Begin by sauteing garlic and shallots in olive oil before adding your rough chopped leeks and mushroom mix. Cover and let them steam. Add water to begin making the soup and add a touch of vegetable base for flavor. Once boiling add a little heavy cream and blend lightly, keeping some texture to the soup. For the finishing touch Chef Pellegrini creates a garnish by sauteing sliced mushrooms, garlic and fresh sage in butter which is placed on top of the soup.
