The Consortium was formed in 1961 by some citizens of San Daniele and all producers of Prosciutto di San Daniele period in order to protect the name of Prosciutto di San Daniele and establish rules that would be compulsory and equal for all producers.
In particolare per garantire ai consumatori un adeguato livello di qualità comune a tutti i prosciutti immessi sul mercato i produttori hanno stabilito una serie di regole che obbligavano per primi essi stessi a rispettarle ed applicarle. In particular to ensure consumers an adequate level of quality common to all the hams on the market manufacturers have established a set of rules that oblige themselves to respect them first and apply them. Le norme riguardavano gli elementi essenziali della produzione del prosciutto: la provenienza dei maiali; il luogo della stagionatura; le fasi della lavorazione; la durata minima della stagionatura; le caratteristiche organolettiche. The policy covers the essential elements of ham production: the origin of the pigs, the place of the aging; stages of processing, the minimum duration of curing, the organoleptic characteristics.

CE 1107 l'Unione Europea iscrive il prosciutto di San Daniele tra i prodotti europei su cui estende la tutela e la protezione comunitaria: il prosciutto di San Daniele diventa DOP Denominazione di Origine Protetta. 2081/92 (now repealed and replaced by EC Regulation No 510/2006) with the EC regulation 1107, the European Union shall register the Prosciutto di San Daniele between European products on which extends the protection and security community: the ham San Daniele DOP becomes Protected Designation of Origin.
Nel 2002, dopo i decreti ministeriali del 1982 e 1994, il Consorzio viene nuovamente incaricato dal Ministero delle Politiche Agricole e Forestali della tutela del prosciutto di San Daniele, in base all'art.
