Acetum is today the largest producer of Balsamic Vinegar of Modena PGI. Acetum is a family company located in the Emilia-Romagna region of Italy, in which Balsamic Vinegar has always been a hallmark of tradition that is passed down from generation to generation. The company was established in 1906 and has since then been producing Aceto Balsamico di Modena in the historical cellars of Motta Vineyards, in which their 4 main production plants have been working to perfect the astounding taste we experience today.
Being the largest producer of Balsamic Vinegar of Modena PGI, Acetum hosts the largest quantity in wooden barrels in the industry (almost 12 million liters). Acetum is the first company to study and implement the most professional quality grading system, known as "The Leaf System" which provides consumers a wide range of qualities to satisfy every need and price point. Acetum is also the first company to achieve the PGI certification for authenticity, as well as to create and patent Blaze: The First Balsamic Glaze.
Throughout their many years in producing Balsamic Vinegar, Acetum has continuously maintained a quality focused production consistent to the true methods of producing Balsamic Vinegar of Modena. Acetum is also a member of the Consortium of Balsamic Vinegar of Modena, the consortium founded by the products' leading & longest-established producers.
