Chicken Marsala

Ingredients:
4 chicken breasts sliced in to scaloppini
4 cups of mixed wild mushrooms thinly sliced
2 shallots finely minced
2 garlic cloves finely minced
2 tbsp chives fine chopped
2 tbsp extra virgin olive oil
2 tbsp butter unsalted
½ cup heavy cream
½ cup marsala wine
fresh white pepper ground
Fleur de sel to taste
Cooking Instructions:
- Sear seasoned chicken scaloppini in hot sauté pan with olive oil. Remove from pan and set aside
- in that same pan ddd butter, olive oil, shallots and garlic, cook vegetables till translucent, ad mushrooms, quick sauté deglaze with Marsala, cook alcohol out and ad heavy cream.
- Add scaloppini back, season to taste and cook sauce onto chicken, finish with chives.
