Chicken Marsala

Chicken Marsala

Main Ingredient:



4    chicken breasts sliced in to scaloppini

4    cups of mixed wild mushrooms thinly sliced

2    shallots finely minced

2    garlic cloves finely minced

2    tbsp chives fine chopped

2    tbsp extra virgin olive oil

2    tbsp butter unsalted

½   cup heavy cream

½   cup marsala wine

     fresh white pepper ground

     Fleur de sel to taste

Cooking Instructions:

  1. Sear seasoned chicken scaloppini  in hot sauté pan with olive oil. Remove from pan and set aside
  2. in that same pan ddd butter, olive oil, shallots and garlic, cook vegetables till translucent, ad mushrooms, quick sauté deglaze with Marsala, cook alcohol out and ad heavy cream.
  3. Add scaloppini back, season to taste and cook sauce onto chicken, finish with chives.
