The refreshing and delicate blend of apricot and angel food cake is the perfect treat for a sugar fix in the afternoon or a nice light finish for dessert after dinner.

 

There are two ways to make apricot and angel food cake. Both cakes recipes are similar though one calls for the apricots to be mixed in with the cake itself while the other is designed for filling or topping your angel food cake with a delicious apricot frosting.

 

To make apricot frosting or filling for your angel food cake you will need:

●     1 and a half cups of chopped apricots

●     Quarter cup of cold water

●     0.25 ounces of gelatin

●     2 tablespoons of lemon juice

●     Salt

●     1 cup of confectioner's sugar

●     1 cup of heavy cream

Cooking Instructions:

To make you apricot filling or frosting soften the gelatin in water and mix with warmed apricots along with sugar, salt and lemon juice. Chill for about an hour. Then whip the heavy cream and apricot mixture separately before folding together. Then split your angel food cake into 2 or 3 layers and fill will apricot mixture and top for a spectacular and refreshing sweet treat.
