Roasted Curried Cauliflower

Roasted Curried Cauliflower Recipe

Main Ingredient:

Cauliflower

Ingredients:

3 teaspoon ground turmeric

2 teaspoon ground coriander

2 teaspoons cardamom

2 teaspoon ground cumin

1 inch ginger, grated

1/2 teaspoon salt

¼ teaspoon cracked black pepper

3 tablespoons olive oil

4 teaspoon water, or as needed to make a paste

1 head cauliflower, chopped into chunks

Cooking Instructions:

Prep time: 10 minutes

Cook time: 25-30 minutes

 

  1. Preheat oven to 350 degrees and lightly oil a large roasting pan.
  2. In a large mixing bowl, mix all spices and ginger.  Add water and olive oil to make a slurry (about the consistency of maple syrup).
  3. Add the sliced cauliflower to the bowl with spice slurry.  Toss well to coat and place in roasting pan.
  4. Roast in the oven until fork tender.  At 15 minutes, stir the cauliflower to expose uncooked surfaces and cook another 10-15 minutes or until tender.

Cooking Tips:

Notes: To make this a meal, serve the cauliflower in a bowl with a poached or fried egg on top and crusty bread alongside. Add some field greens with apple cider vinaigrette to round out the meal. Variation: Substitute garam masala, Chinese five-spice powder, paprika, or chili powder for any spices that you do not have on hand. Nutrition: Cauliflower is member of cruciferous family and as such is a super cancer fighter! The turmeric and spices are all high in antioxidants and so help fight inflammation, the underlying cause of aging and most illnesses like cancer, heart diseasae, diabetes, etc.
