Simply boil up your cauliflower with some salt for about 10 minutes or until it is tender and then drain and mash it. Once you have your base you can really do anything with it. You can make it creamier yet keep it healthy and low fat by mixing it out with reduced fat sour cream and low fat yogurt. You can also go with a Southwest flavor by combining your pureed cauliflower with spinach, garlic, cheddar cheese and jalapenos.
